In almost every restaurant or food service establishment, dessert is part of the menu. Unlike the balance of the menu, cooks and chefs do not produce dessert items. Someone produces desserts with a specialized knowledge in baking. Therefore, whether produced in-house or purchased from an outside supplier, the Executive Chef relies on people who have knowledge in this specialized area. York Technical Institute's Culinary Arts/Restaurant Management, Pastry Arts and Catering Programs are located at YTI's Lancaster branch campus, in the culinary division called, L' École de Cuisine, located just off Rte. 30 at 3050 Hempland Rd, Lancaster.
